Baileys Cheesecake

Ingredients

Base

250g Digestive Biscuits

100g Butter

Filling

600g Mascarpone Cheese

150g Icing Sugar

300ml Double Cream

100g Dark Chocolate (Grated)

75ml Baileys

Method
  1. To make the base, melt the Butter in a saucepan or in the microwave. Crush the Digestives. (I use a potato masher) Mix the Biscuits with the melted Butter and using the potato masher, press into the bottom of an 18in Springform Tin. Chill in the fridge while you make the filling.

  2. Whip the Cream until fairly firm. Then lightly whip the Mascarpone with the Baileys and Sugar.

  3. Fold in the Cream and Grated Chocolate.

  4. Spoon over the prepared base and set in the fridge for about 2 hours.
