Hot Cross Buns

Ingredients

500g Strong Bread Flour

½tsp Salt

2tsp Mixed Spice

50g Caster Sugar

50g Butter

200g Dried Mixed Fruit

7g Sachet Easy-Blend Yeast

200ml Milk

2 Eggs

Method
  1. Sift Flour, Salt, Mixed Spice and Sugar together in a bowl.

  2. Cut Butter into cubes, and rub into the flour mix with your fingers. Stir in the Mixed Fruit, then sprinkle over the Yeast and stir in.

  3. Gently warm the Milk, (it shouldn't be too hot or the heat will kill the yeast, you should be able to put your finger in it and not get burnt). Beat the Eggs into the milk and pour over the dry ingredients. Mix all the ingredients to a moist dough then leave to soak for 5 min. 

  4. Tip the dough out onto a floured surface and cut the dough into 8 equal pieces. Shape the dough into buns and place well apart on a floured baking tray. Cover loosely with clingfilm and leave in a warm place to rise for 45min - 1hr15min.

  5. When the buns have risen, Preheat the oven to 200C(Fan). Mix 3tbsp Plain Flour with 2tbsp Water to make the paste for the crosses. Pour into a small piping bag and Pipe crosses onto the top of each bun

  6. Bake for 12-15min until golden. Remove from the oven and brush with Golden Syrup or Honey for a lovely shine. Best eaten within 24hrs.
