Bakewell Tart

Ingredients

Pastry

170g Plain Flour

75g Unsalted Butter

Pinch of Salt

Filling

170g Strawberry Jam

100g Unsalted Butter

100g Caster Sugar

100g Ground Almonds

3 Eggs, plus 1 Egg Yolk

1tsp Almond Extract

Handful Flaked Almonds

Method
  1. Rub the Butter into the Flour. Add a pinch of salt and enough cold water to make a smooth dough.

  2. Wrap in cling film and leave in the fridge for at least 30 minutes.

  3. Roll out the pastry and place into an 8in tart tin.

  4. Next, for the filling, cream together the Butter and Sugar.

  5. Add the Ground Almonds, Eggs and Almond Essence and mix until smooth.

  6. Spread the Jam onto the Pastry base, then pour in the filling.

  7. Place in a preheated oven at 180C(Fan) for 25-30 minutes until lightly golden brown on top. Sprinkle flaked almonds on top 5 minutes before the end of baking time to lightly toast.

  8. Leave to rest and cool slightly for 20 minutes.
