Victoria Sponge

Ingredients

225g Margarine (Softened)

225g Caster Sugar

225g Self Raising Flour

2tsp Baking Powder

4      Eggs

1tsp Vanilla Essence 

Method
  1. Preheat oven to 160C(Fan), and grease and line 2X8in sandwich tins.

  2. Crack the Eggs into a large mixing bowl, then add the Sugar, Flour, Baking Powder, Margarine and Vanilla.

  3. Mix everything together until well combined.

  4. Divide your mixture evenly between the two prepared tins, (I like to weigh them to make sure they're even), pop them onto the middle shelf of the oven and Bake for 20-25 minutes.   

  5. They are ready when they turn golden brown and shrink away a bit from the sides of the tin. They should be springy to touch. 

  6. Remove from the oven and leave to cool in their tins for 5 minutes, then transfer them to a wire rack to cool completely​, before decorating.

If you want to store them overnight before filling and decorating, leave them to cool completely, then wrap well in clingfilm. Then put them in a cupboard or anywhere room temperature. DO NOT put them in the fridge, it will make your sponge hard and dry.
