Lemon Loaf with Poppy and Chai Seeds

Ingredients

160g Plain Flour

12g Baking Powder

4g Baking Soda

2g Salt

170g Coconut Oil

85g Sugar

2 Eggs + 1 Yolk

30g Poppy Seeds

25g Chai Seeds

Zest of 2 Lemons

Vanilla to taste

​170g Low Fat Natural Yogurt

60ml Lemon Juice (Approx 1.5 lemons)

60g Sugar

Method

Preheat oven to 170 C, (FAN), Butter and Flour Loaf tin.

  1. Sieve together Flour, Baking Powder, Baking Soda and Salt. Set aside.

  2. Cream the Coconut Oil and Sugar until fluffy. Add the eggs, one at a time.

  3. Add in the Poppy and Chai Seeds, Stir then add Lemon Zest and Vanilla.

  4. Mix in half the Flour mix, stir in the Yogurt, and then add the rest of the Flour.

  5. Transfer to loaf tin, and bake for 40-50 min.

  6. Just before the loaf comes out of the oven, make the lemon syrup. Heat the Lemon Juice and Sugar in small saucepan until it comes to  simmer.

  7. As soon as the loaf comes out of the oven, spoon the syrup over the top. Leave the loaf in its tin for a few hours or overnight.(Extra delicious if left till the following day).​
