Carrageen Panna Cotta

Ingredients

5g Carrageen Moss (Big Handful)

2tbsp Brown Sugar

2tsp Vanilla

250ml Milk

250ml Double Cream

Method
  1. Add the Carrageen Moss to a pot of cold water and bring to boil, continue boiling for about 10min.

  2. Meanwhile, heat the Milk, Cream, Vanilla and Sugar in another saucepan to simmer.

  3. Place a Muslin cloth over a colander and bowl. Pour in the Carrageen and ALL the liquid. Twist the muslin and squeeze out the liquid using a spoon.  

  4. Add this liquid to the Milk pan, stir well and cook on a low heat for 5 minutes.

  5. VERY IMPORTANT                          Leave to cool, until room temperature, stirring occasionally.

  6. When it has reached room temperature, pour into your bowls, or moulds and chill in the fridge for at least 1 hour before serving.​
