Carrageen Panna Cotta
Ingredients
5g Carrageen Moss (Big Handful)
2tbsp Brown Sugar
2tsp Vanilla
250ml Milk
250ml Double Cream
Method

Add the Carrageen Moss to a pot of cold water and bring to boil, continue boiling for about 10min.

Meanwhile, heat the Milk, Cream, Vanilla and Sugar in another saucepan to simmer.

Place a Muslin cloth over a colander and bowl. Pour in the Carrageen and ALL the liquid. Twist the muslin and squeeze out the liquid using a spoon.

Add this liquid to the Milk pan, stir well and cook on a low heat for 5 minutes.

VERY IMPORTANT Leave to cool, until room temperature, stirring occasionally.

When it has reached room temperature, pour into your bowls, or moulds and chill in the fridge for at least 1 hour before serving.​
