Sun-Dried Tomato Bread

Ingredients

350g Self Raising Flour

1tsp Dried Basil

1tsp Dried Parsley

1tsp Dried Oregano

1tsp Caster Sugar

300ml Milk

1tbsp Oil (I used the oil from the tomatoes)

1tbsp Tomato Puree

50g Sun-Dried Tomatoes (chopped)

Method
  1. Preheat oven to 170C(fan), Grease and line the bottom of a 2lb loaf tin.

  2. Put the Flour, Herbs and Sugar into a large mixing bowl, and stir together. 

  3. In a jug, mix together the Milk, Oil and Tomato Puree.Give it a good mix.

  4. Pour into the flour mix, add the Sun-Dried and stir well to combine everything.

  5. Transfer the dough into the prepared tin, and bake for 35 to 45 min, until well risen and base sounds hollow when tapped.
