Bakewell Tart.

Hi guys. Sorry I’ve been so quiet lately, had a busy few weeks. But I’m back to normal now and ready to bake.


This week I wanted to make something new and a Bakewell tart popped into my head. I love Bakewells but I’ve never made one before.


So as usual, when I’m looking for a recipe, my first stop is the Odlums website, definitely my favourite for simple, easy to follow recipes.

I found the recipe and had a quick check to make sure I had everything I needed in the house, and of course there’s not a scrape of unsalted butter in the house. So poor my poor Hubby gets sent off to the shop. I swear the only time he goes to the shop without complaining is when he’s getting dessert.


For anyone who doesn’t know, a Bakewell tart is pastry, with a layer of jam, topped with frangipane. So, so delicious, perfect with a nice cup of tea.


As always, I had no patience and didn’t let my pastry chill for long enough before trying to roll it. It was crumbling and falling apart, so back in the fridge it went for its full 30 minutes. Then it was perfect, well not perfect, but decent.


So all in all, nothing tricky in this recipe. Pastry is easy, just rub the butter into the flour and add tiny bits of water until it’s a nice smooth dough, just make sure you chill it for the right amount of time. The frangipane was surprisingly easy as well. I’m pretty sure the only time I made it before, it turned into disgusting, mushy goo. Thankfully no mushy goo this time. You just cream your butter and sugar, add the eggs, ground almonds and almond extract, mix it all up and pour on top of the pastry and jam.


Now I must have had my oven up a little too high, the top was starting to get a bit too brown, so if this happens, just cover it in a sheet of tinfoil and turn your oven down a little.


I was thrilled with how my Bakewell turned out, it was so tasty. My kids wouldn’t even try it because apparently they don’t like jam. Oh well, more for me and the Husband I guess.
