Carrageen and Vanilla Panna Cotta

If you think you don’t want seaweed made into a dessert, then you are mistaken. These Carrageen and Vanilla Panna Cotta are simply delicious.


For those of you who don’t know, Carrageen Moss or Irish Moss is jam packed with goodness. It is rich in Vitamins A,E,F and K, it is also a good source of calcium, and because of its high Potassium Chloride content it is a very good remedy for sore throats, coughs and colds.


I like to use Carrageen to set some of my desserts because I don't like to use gelatine. If I’m being honest, I think it’s disgusting. But that’s just me.


BAKING DISASTER ALERT

First off I’ll tell you about the last time I made these, it was a few weeks ago and it was an awful baking disaster. I have the recipe for these written in my recipe book and one of the steps was marked with a huge star and VERY IMPORTANT was written beside it. So of course me being me ignored this advice. I thought to myself, ‘’I’m sure it’s not that important to cool the mixture down properly before pouring it into the moulds’’ well it turns out it is important, it is VERY important. So if you don’t want a Panna Cotta with a horrible tough layer on top, then have some patience and follow this step! This was also the time I decided to make a lovely Lemon curd to go on top of them, and as nice as the curd was it completely overpowered the very delicate vanilla flavour. Not a good baking day at all. I ended up with a panna cotta that was completely the wrong texture and tasted of nothing but lemon.


This time it was much better, the Panna Cotta has a lovely light texture, it just melts in your mouth and it has such a beautiful, delicate vanilla flavour. I served it with some chopped strawberries, they were a wonderful accompaniment and didn’t overpower the vanilla at all.


They were a huge hit in my house, even my 5year old had a few servings.


Very, very simple to make, it really is! Give it a try, I promise you won’t be disappointed!
