Peanut Chocolate Tart

OMG!!!!

When I started this morning’s baking, all I knew was that I wanted to make a tart of some kind. I know it’s terrible to start out cooking and not have a clue what you're making, but on this occasion I am very pleased with the results .


So I started out and made my pastry, while it was chilling I had a wee root around in my cupboards, found a jar of peanut butter and all I could think was chocolate and peanut butter. Yum Yum Yum.


So while I was waiting for my tart case to cool after being baked, I got to work on my fillings.

I decided to mix the peanut butter with a tin of condensed milk, I didn’t want it to be too peanut buttery, so I just started out with 100g and had a wee taste, definitely needed more. I ended up using 200g of peanut butter, but you can use however much you want depending on you own tastes. I poured it onto the cooled pastry case and popped it into the fridge for a few minutes to firm a little while I started on the ganache.


Now I hadn’t made a chocolate ganache before so I was a wee bit nervous of it. According to my old friend Google, for a nice thick ganache, the ratio should be 2:1 chocolate and cream. I was a bit surprised at how easy it was to make. You pop the cream into a saucepan and bring to simmer, once it’s gently bubbling, dump in the chocolate and put a lid on the saucepan. The steam from the cream melts the chocolate. It’s also very important not to touch it for about 5 min. Don’t stir, don’t lift the lid just throw in the chocolate put on the lid and leave it alone.


I don’t know what would happen if you messed with it but as I had no more cream in the house I wasn’t going to risk messing it up. So I waited, and as I’m sure you all know by now- I’m not the most patient person in the world. And it was well worth the wait, after the longest 5 minutes of my life I took off the lid and started to stir and it very quickly turned into this gorgeously smooth, velvety chocolate. I poured this over the top of the peanut butter which had firmed up nicely. So off it all goes into the fridge for the chocolate to set.


Next time i make this I will be swapping the fillings around, so the chocolate will be at the bottom and the peanut butter on top, this is because when the chocolate set, it was much firmer and heavier than the peanut butter mix causing it to spill out quite a lot, thankfully it didn’t effect the taste.


So my verdict for my randomly thrown together Chocolate and Peanut Butter Tart is......... Just WOW. Seriously! Try it! It is delicious!
