Sun-dried Tomato Bread

After all the sweets and cakes at Frankie’s party I thought I’d go for some savoury bread this time. I made this bread once years ago and I’ve been wanting to make it again ever since. It's so yummy. It’s the perfect accompaniment to soups or salads, or as a nice side to lasagne or pasta bake.
The amount of cookbooks I own and I still Google most of the recipes I use. I found this recipe in the Odlums website, I’m a big fan of the Odlums website, it has some really lovely recipes.
Now, I did adjust the recipe slightly, it said to use 1tbsp of Sunflower Oil, but the Sun-Dried tomatoes come in such a gorgeous oil that it seemed such a shame not to use it. So as usual, a nice simple recipe, and it makes a lovely dough, really light and fluffy and the amazing smells coming from the bowl. It smells like pizza. My whole house smells like pizza.
As you can see from the photos, we loved this bread so much that we ate most of it before I got a chance to take the photos. It’s a lovely soft bread, with a slight taste of pizza from the herbs and oil and a great burst of flavour when you get a piece of the tomato.
Not really much else to say except, make this bread. It’s easy, it’s delicious and you will NOT regret it.
